This recipe is inspired by HealthyGirl Kitchen’s mashed potatoes. I’ve made a few tweaks to ensure it’s entirely cholesterol-free and guilt-free.

Ingredients

  • 7 small russet potatoes (4.5 cups)
  • 1 cup unsweetened oat milk
  • ½ cup nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 Tbsp chives (for garnish)
  • black pepper (for garnish)

Instructions

  • Prepare a large pot with water and bring it to a boil.
  • Wash, peel, and quarter the potatoes, then add them to the boiling water. Cook for 15 minutes or until very soft.
  • Strain the potatoes and return them to the pot. Add the oat milk and mash until smooth, removing all chunks.
  • Stir in the nutritional yeast, garlic powder, and salt, and mash until well combined.
  • Garnish with chives and black pepper, then serve!

What Makes it cholesterol-Free?

This recipe is 100% cholesterol-free for two reasons:

  • No dietary cholesterol: Since animal products are the only source of dietary cholesterol, this 100% plant-based recipe keeps your cholesterol in check.
  • No added fats: Some high-fat recipes might be labeled as cholesterol-free, but the saturated fats in them will get converted into cholesterol by your liver. This recipe skips that risk entirely.
