I am determined to share as many cholesterol-free, guilt-free Thanksgiving recipes as possible before the big day. That way, we can be prepared and enjoy the holidays without stressing about our health.

This recipe comes from Forks Over Knives. While they have great recipes, not all are suited for those of us trying to avoid statins.

Ingredients

  • 1 large sweet onion, chopped
  • 3 garlic cloves, minced
  • 16 oz. mushrooms, sliced (any kind)
  • 2 cups vegetable broth (no salt added)
  • 2 tsp white miso paste
  • 2 Tbsp oat flour or whole wheat flour (optional)
  • 2 Tbsp coconut aminos
  • Freshly ground black pepper, to taste

Instructions

  • In a medium pan over medium-high heat, cook the onion. Let it brown slightly while stirring, adding a splash of water if it starts to burn.
  • Add the garlic and mushrooms, cooking until the mushrooms soften. Keep adding small amounts of water to prevent burning.
  • Pour 1 cup of broth into the pan and stir.
  • In a small bowl, mix the remaining cup of broth with the miso, coconut aminos, and flour (if using), stirring until the miso dissolves.
  • Add the miso mixture to the pan and continue cooking until the gravy reaches your desired thickness.
  • Season with black pepper to taste. Serve warm.

What Makes it cholesterol-Free?

Two key things make this recipe completely cholesterol-free, allowing you to enjoy it without affecting your health:

  • No dietary cholesterol: Animal products are the only source of dietary cholesterol, and this recipe is 100% plant-based.
  • No added fats: Some recipes may claim to be cholesterol-free but contain high amounts of fat, which the liver converts into cholesterol. This recipe avoids that pitfall.

The secret to lowering cholesterol naturally and quickly is to cut out dietary cholesterol and added fats like oils. Each time we consume these, we harm our arteries and increase the risk of heart attacks and strokes.

As much as I love steak and butter, the consequences are too serious for me to ignore.
