I was craving a tapas-style dinner—something snackable and fun, but also super quick to make. This recipe took me less than 5 minutes to prep, and it was ready from the oven in just 14 minutes.

It was so delicious I almost ate the whole thing! Let’s get started!​

Ingredients – Picture Below

  • 1 polenta log, sliced into rounds
  • 1 zucchini, sliced into rounds
  • ¼ block of extra-firm tofu, sliced
  • 8 oz mushrooms (one standard box from the store)
  • 1 tomato, sliced
  • 1 serrano pepper, chopped

Instructions

  • Preheat your oven to 400°F on the Air Fryer setting. (If you don't have an Air Fryer setting, just use bake).
  • Line a cookie sheet with parchment paper and arrange the polenta, zucchini, and mushroom slices. (See picture below for reference.)
  • Place the tray in the oven for 7 minutes.
  • Flip the polenta slices, then stack the ingredients in this order: polenta, zucchini, tomato, tofu, and mushroom on top.
  • Return the tray to the oven for another 7 minutes and enjoy

What Makes it cholesterol-Free?

This recipe is 100% cholesterol-free for two reasons:

  • No dietary cholesterol: Since animal products are the only source of dietary cholesterol, this 100% plant-based recipe keeps your cholesterol in check.
  • No added fats: Some high-fat recipes might be labeled as cholesterol-free, but the saturated fats in them will get converted into cholesterol by your liver. This recipe skips that risk entirely.
