This is the easiest broth I make and it's kid-approved!

🔎 Overview

🛒 Ingredients

  • 4 squares whole-grain ramen noodles (≈280 g total)
  • 10 cups water

Broth spices:

  • 6 Tbsp nutritional yeast
  • 2 Tbsp garlic powder
  • 2 Tbsp onion powder
  • 2 tsp ground ginger
  • 2 tsp turmeric
  • Optional umami, choose one: 2–3 Tbsp white miso (stir in after boiling stops)
    OR 
    2 Tbsp coconut aminos
  • Optional heat: 1–2 tsp gochugaru OR chili flakes
  • Finish (do not skip): ¼–⅓ cup fresh lemon or lime juice (to taste)

Optional add-ins:

  • Bok choy (add raw then you start making the broth)
  • Broccoli (takes 3-minutes to cook if boiled)
  • Cauliflower (takes 3-minutes to cook if boiled)
  • Corn kernels (add raw when adding spices. They take 2-5 minutes to boil)
  • Mushrooms (add raw when you start making the broth)
  • Scallions, sliced finely
  • Spinach (add after heat is turned off. It takes around 30 seconds to wilt)

🔥 Instructions

  • Boil the water in a large pot.
  • Add noodle squares and, after 3 minutes, separate the noodles
  • Add 4 minutes to your timer
  • While timer is going, add spices (except lime, lemon, or miso)
  • Turn the heat off when the 4-minute timer goes off
  • Add lime, lemon, and/or miso

💡 Storage Tips

  • Fridge: Keeps 3–4 days in the fridge
  • Freezer: Separate by portion and freeze for around 2-3 months
