You know how sometimes, when you learn something, you just can’t unlearn it? That’s exactly what happened to me. When I finally understood that most of the chronic diseases that are killing us are foodborne… everything changed. I couldn’t justify eating like I used to.

Don’t get me wrong—I’m not perfect. BUT, there’s a lot of power in knowing that every bite I take is either healing me or hurting me.

That’s why I wanted a holiday cookie recipe I could enjoy without guilt—keeping the same traditions alive, but without hurting my body or my health. These cookies won’t raise your cholesterol and are perfect if you’re keeping an eye on weight loss.

Ingredients

(Makes 20–24 medium-sized cookies)

  • 1 3/4 cups whole wheat pastry flour
  • 1/4 cup oat flour (or make your own by blending rolled oats)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt (optional)
  • 1/4 cup unsweetened applesauce (acts as an oil substitute)
  • 1/3 cup maple syrup (or 3–4 blended Medjool dates for sweetness)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional, for a festive flavor)
  • 2–3 tablespoons unsweetened plant milk (as needed to form dough)

Instructions

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper or a silicone mat.

2. Mix Dry Ingredients:

  • In a large bowl, whisk together the flours, baking powder, baking soda, and salt.

3. Mix Wet Ingredients:

  • In another bowl, mix the applesauce, maple syrup (or date paste), vanilla extract, and almond extract.

4. Combine and Form Dough:

  • Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  • If the dough is too dry, add plant milk 1 tablespoon at a time until it comes together.

5. Roll and Cut:

  • Lightly flour a clean surface and roll out the dough to about 1/4 inch thick.
  • Use festive cookie cutters and place the shapes on the prepared baking sheet.
  • Pro Tip 1: If the dough feels sticky, chill it for 10–15 minutes.
  • Pro Tip 2: Re-roll scraps to cut more cookies.

6. Bake:

  • Bake for 8–10 minutes, or until the edges are lightly golden. Avoid overbaking!

7. Cool and Decorate:

  • Let cookies cool for 5 minutes on the baking sheet, then transfer them to a wire rack.
  • Decorate with icing (optional) or sprinkle lightly with cinnamon.

Storage tips

Un-Iced Cookies

  • Room Temperature: Store in an airtight container for 5–7 days.
  • Freezing: Freeze in a freezer-safe container with parchment paper between layers for up to 3 months.

Iced Cookies

  • Short-Term: Store in a single layer in an airtight container for up to 3 days.
  • Longer Storage: Refrigerate for up to 1 week.
  • Freezing: Freeze iced cookies in a single layer (though the icing may crack).
