I don’t know about you, but some days are so busy that self-care becomes the last thing on my mind.

When those days turn into weeks, things like working out and eating right tend to slip off my radar—even though they should be my top priority!

That’s why, during these extra-hectic times, I rely on meals that require the absolute minimum effort. This sandwich is my lifesaver—it’s quick, fresh, and keeps me on track without the stress.

I actually discovered it on a day when I hadn’t gone grocery shopping, and these were the only ingredients I had. Since then, it’s become a staple in my hectic-day lineup.

Ingredients

  • 2 slices of 100% whole wheat bread
  • 1 roma tomato, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 4 butter lettuce leaves
  • 1 serrano, sliced
  • Dijon mustard

Instructions

  • Spread mustard on one slice of bread.
  • Layer all the tomato slices evenly over the mustard.
  • Add all the cucumber slices on top of the tomatoes.
  • Add as many serrano slices as you like on top of the cucumbers.
  • Top it off with the butter lettuce leaves.
  • Finish by placing the second slice of bread on top.
  • Press the sandwich down gently, and enjoy!

1. Spread the mustard.

2. Add all the ingredients on top.

3. Close it and eat it!
