There’s something about grabbing food with my hands that I absolutely love. I adore eating burritos, tacos, pizza, and anything else that can be hand-held.

Since all of this is usually super unhealthy, I’ve had to create my own recipes that are healthier, help lower my cholesterol, and still let me enjoy my food as before.

With that said… here's a recipe so indulgent, it makes me feel like I’m indulging in something sinfully unhealthy.

Ingredients

  • 1 Mango, sliced
  • 1 cup butter lettuce, chopped
  • ¼ cup shallots, chopped
  • ¼ cup yellow onion, chopped
  • ¼ cup black beans
  • 2 corn tortillas
  • 2 tsp apple cider vinegar (optional)
  • 2 tsp nutritional yeast (optional)
  • ⅛ tsp cayenne pepper (optional)

Instructions

  • Warm the tortillas on the stove until crispy.
  • Cook the shallots and onion on the stove with ½ cup water (drain when done).
  • Combine all ingredients in a bowl (except the tortillas).
  • Place the mixture on top of the tortillas.

How to Read Tortillas' Labels:

The cleaner the ingredients in the tortillas you buy, the faster you’ll see and feel results in your body. Here are examples of clean and dirty labels.

Clean Label: Masienda
This is the cleanest label I’ve seen. The tortillas contain non-GMO corn, water, and lime. They also specify no preservatives, no gums, and no gluten. Here’s what the label looks like:


Dirty Label: Guerrero
This is an example of one of the dirtiest labels I’ve seen. I avoid these at all costs. The tortillas contain corn masa flour, water, and include 2% or less of: cellulose gum, guar gum, propionic acid, benzoic acid, and phosphoric acid. Here’s what the label looks like:


Cleanest Option: My favorite masa
If you want the cleanest option, you can make them by hand. It’s the easiest recipe you can imagine. Simply buy the masa and add water. That’s it. Here’s what the label looks like:
