Freshly baked cakey brownies cut into squares, fluffy and rich, on a wooden board with cocoa powder dusted nearby.

🍫 Who says you have to give up brownies to lower cholesterol?

A few weeks ago, I shared my recipe for fudgy, gooey brownies. But sometimes I want more of a cakey brownie. Well—if you feel the same then you're going to love these!

This new version is light, fluffy, chocolatey, and moussey… but still 100% cholesterol-free. It’s proof that dessert can feel indulgent without hurting your health goals.

  • Step-by-step instructions.
  • Pro tips and storage instructions.

🛒 Ingredients

(Makes 6 servings)

  • 1 cup whole-wheat flour (any kind: white, golden, or regular)
  • 1/2 cup cocoa powder, unsweetened
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup applesauce, unsweetened
  • 1/2 cup maple syrup
  • 3/4 cup plant milk, unsweetened (I use oat)
  • 1 tsp vanilla extract

🔥 Instructions

  • Preheat oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.
  • In a large bowl, whisk together oat flour, cocoa powder, baking soda, baking powder, and salt.
  • In another bowl, mix applesauce, maple syrup, plant milk, and vanilla until smooth.
  • Pour wet into dry, stir until just combined—do not overmix.
  • Spread evenly in the baking dish.
  • Bake 25–28 minutes, or until a toothpick comes out clean (a few moist crumbs are fine).
  • Let it cool on the baking dish for 10-15 minutes and serve!

💡 Pro tips

  • For a deeper chocolate taste, add 1–2 tbsp extra cocoa powder and 1 tbsp more plant milk.

📦 Storage Tips

  • Fridge: Slice brownies in cubes and store them in a gallon-size ziploc (with a paper towel inside to absorb moisture) for up to 4-5 days.
  • Freezer: Freeze brownie cubes in ziploc bag for up to 3 months.
