🛒 Ingredients

  • 1 large head cauliflower, chopped into bite-size florets
  • 3 medium potatoes, peeled + diced (Yukon or russet)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated (or 1 tsp ginger powder)
  • 1 can diced tomatoes (no salt added preferred)
  • 1 cup water
  • 1 tsp turmeric
  • 1 ½ tsp ground cumin
  • 1 ½ tsp ground coriander
  • 1 tsp garam masala
  • ½–1 tsp red chili powder (optional)
  • ½ tsp salt (optional; or omit)
  • Handful fresh cilantro, chopped (optional)

🔥 Instructions: Instant Pot

  • Add everything to the instant pot (except cilantro) and stir
  • Manual/Pressure Cook: 2 minutes
  • Natural Release: 10 minutes
  • Quick-release remaining pressure.
  • Open lid: gently fold everything together
  • Add cilantro
  • Serve as is, or add brown rice

Pro Tips:

  • If you want it thicker: Press Sauté, cook 2–3 minutes, stirring occasionally until desired thickness.

🔥 Instructions: stovetop

  • Add to pot: onion, garlic, ginger, 3 tablespoons of water
  • Cook over medium heat for 3–4 minutes until the onions soften.
  • Add spices + stir for 30 seconds: turmeric, cumin, coriander, garam masala, chili powder (optional)
  • Add veggies + tomato + stir well: cauliflowerpotatoes, canned tomatoes, 1 cup water, salt (optional)
  • Simmer: Cover with a lid and cook on medium-low heat for 18–22 minutes, stirring every 4–5 minutes. Cook in 5-minute increments if potatoes aren't soft yet.
  • Turn off the heat and gently fold everything together.
  • Add cilantro if using.
  • Serve as is, or add brown rice

Pro Tips:

  • If it’s too watery → remove the lid and simmer 3–5 minutes.
  • If it’s too thick → add 2–4 tablespoons water.

📦 Storage Tips

  • Fridge: put enough portions for 3-4 days (if you are eating right away).
  • Freezer: freeze the rest divided by portion for up to 2 months.
